big recommendation to get a meat thermometer. I learned that chicken being a lil' sketchy looking in the middle (esp. redness on the bones?) does *not* necessarily mean it's undercooked, because those visual signs can vary by pH, age of chicken, etc. but temperature will not lie to you about them salmonellas being dead. I had been overcooking chicken so bad haha

@stephen since I read that it can happen when the chicken is so young its bones haven't finished their whole deal, it makes me sort of sad for the chicken. but any time I had to put the chicken back in the oven for longer because it wasn't done, it *feels* safe

though it does take a bit to get over the redness even when you know it's cooked to a safe temp.... still sketches me out at times
